Scientific name: Sparus Auratus
Species: Sparus Auratus
Gilthead Sea Bream is found along the Atlantic coastline from Cape Verde and Canary Islands up to the britsih Isles during summer, but is primarily to be found in the Mediterranean Sea and only rarely in the Black Sea.
Sea Bream lives in shallow waters (usually less than 30 metres) and during spring it often enters into brackish water, coastal lagoons or estuaries where it performs very well.
SeaBream is feeding on small fish, shellfish including oysters and mussels which it is able to crack with its very strong jaws.
Farming of SeaBream is increasingly becoming popular due to the high value of the meat. Farming in Sea cages is increasing rapidly in countries like Greece, Turkey, Italy, Tunesia, Israel and Spain.
Sea Bream is growing very slow like Sea Bass and is reaching a size of 350 g within 2 years.
Sea Bream is one of the most highly prized fish due to the sweet flavour, the moist but firm texture and the rosy-white colouration of the meat. Most of the fish are sold and prepared as dressed where the Sea Bream undoubtedly is keeping its very best characteristics.
