Sturgeon

Sturgeon are large, ancient, bottom-dwelling fish belonging to the family Acipenseridae. They are prized both for their high-quality meat and for producing caviar, a luxury food product made from their eggs. Sturgeon species are found in rivers, lakes, and coastal waters primarily in the Northern Hemisphere. They have elongated bodies covered with bony scutes instead of typical fish scales and possess a cartilaginous skeleton.

All feed formulas developed by Aller Aqua at the Aller Aqua Research Centre follow these requirements to ensure proper growth and health:

  • Protein Needs: Sturgeon require high-protein diets, typically between 40-50% crude protein, especially during early growth stages. Protein supports muscle development and overall growth.

  • Fat and Energy Needs: Lipid content in feed ranges from 10-15%, supplying essential fatty acids (like EPA and DHA) important for growth, reproduction, and health.

  • Essential Nutrients: Sturgeon need balanced vitamins (A, D, E, C, B-complex) and minerals (calcium, phosphorus, selenium, zinc, iodine). These nutrients support bone development, immune system, and metabolic functions.

  • Feed Ingredients: Traditional sturgeon feeds include fishmeal and fish oil for protein and lipids. To reduce costs and enhance sustainability, plant proteins and oils, along with by-products from aquaculture and agriculture, are increasingly incorporated.

The range of solutions developed by Aller Aqua is suitable for each stage of the fish lifecycle as well as the following farming methods:

  • Culture Systems: Sturgeon farming is typically done in ponds, raceways, flow-through tanks, and recirculating aquaculture systems (RAS). These controlled environments help manage water quality and reduce disease risks.

  • Environmental Conditions: Sturgeon prefer cool, well-oxygenated water, usually between 16-20°C, and require clean, flowing water to thrive.

  • Stocking Density: Density varies depending on system and fish size, commonly ranging from 5 to 20 kg/m³. Careful management is necessary to avoid stress and maintain water quality.

  • Feeding Practices: Sturgeon are slow feeders and require frequent, small feedings throughout the day with specially formulated sinking pellets suited to their bottom-feeding habits.

  • Health Management: Biosecurity and water quality management are key to prevent diseases such as bacterial infections and parasites.

A carefully selected composition of raw materials and verified feed formulas ensure that the fish is rich in minerals and vitamins, and at the same time that the texture of meat is of the highest quality. We make sure that fish grown using solutions provided by Aller Aqua offer the following benefits:

  • Nutritional Value:
Sturgeon meat is rich in high-quality protein, low in fat, and contains beneficial omega-3 fatty acids. It provides essential vitamins and minerals supporting cardiovascular and brain health.

  • Culinary Value:
Sturgeon meat has a firm texture and mild flavor suitable for smoking, grilling, poaching, or baking. Caviar, derived from sturgeon eggs, is a highly valued delicacy worldwide.

Farming sturgeon helps reduce pressure on wild populations, many of which are endangered. Responsible aquaculture contributes to species conservation and provides a sustainable source of both meat and caviar. Controlled farming environments ensure product safety and traceability, reducing contamination risks often associated with wild-caught fish.
